How do I avoid having to constantly re-season my wok?
I read you are only supposed to clean your seasoned wok with water and a sponge after using it, then heat the wok to evaporate the water and put a new coat of oil on it.
But I find I usually need detergent and steel wool to get rid of all the gunk on my wok and so I have to re-season it again.
Please tell me how I avoid the need the re-season my wok
Would it matter that much if I cleaned it with steel wool, heated it to get rid of the water and applied the oil as per usual instead of re-seasoning it?
It is a carbon steel wok (not non-stick)
The best way I’ve found to clean a carbon steel wok without re-seasoning is by using a plastic scrub brush and salt. Here’s how:
1. Use hot water and a plastic scrub brush to get off as much gunk and food as possible. Do not use detergent!
2. Dry the wok on the stove.
3. To get the rest of the gunk off, pour some coarse salt in the wok and gently scrub.
4. Finally, wipe a thin coat of oil over the pan.
The wok may still look somewhat burned and ugly, but it’s clean and the seasoning is intact.
